INGREDIENTS
- 500g chicken breast
- Corriander
- lime
- coconut milk
- chilli
- Spring onion
- garlic
- fish sauce
METHOD
- Cut chicken breasts in half – flat wats
- Cut spring onion into straws
- Marinate chicken for 10 minutes in the juice of 2 limes
- Add to pan with 2/3 spring onions, 3/4 bunch of coriander leaves, garlic, chilli and fish sauce
- Add one or two tins of light coconut cream or milk.
SERVE
With rice, popodums, dollop of tzatziki and mango chutney.
Definitely a favourite!
