Ingredients
- 1/3 cup of olive oil
- 60g finely grated parmesan
- 125g Pancetta – chopped
- 2 garlic cloves – crushed
- 2 very fresh eggs
- 2 red chillis (seeds removed)
- 500g spaghetti
Method
- Boil pasta
- Beat parmesan, egg and cracked pepper in a bowl
- Lightly fry garlic
- Add pancetta and chillis
- Drain pasta and add to pancetta
- Toss for 1 minute to allow to cool slightly
- Add egg and parmesan
- Stir through and serve
