Creamless Carbonara

Ingredients

  • 1/3 cup of olive oil
  • 60g finely grated parmesan
  • 125g Pancetta – chopped
  • 2 garlic cloves – crushed
  • 2 very fresh eggs
  • 2 red chillis (seeds removed)
  • 500g spaghetti

Method

  1. Boil pasta
  2. Beat parmesan, egg and cracked pepper in a bowl
  3. Lightly fry garlic
  4. Add pancetta and chillis
  5. Drain pasta and add to pancetta
  6. Toss for 1 minute to allow to cool slightly
  7. Add egg and parmesan
  8. Stir through and serve
