Crunchy Cashew Thai Quinoa Salad With Ginger Peanut Dressing

INGREDIENTS

  • 3/4 Cup of Uncooked Quinoa

  • 1-2 Cups of shredded red cabbage, depending on how much crunch you want!

  • 1/2 Small Red Onion- diced

  • 1 Capsicum – diced

  • 1 Cup of Shredded Carrots

  • 1/2 Cup of Coriander

  • 1/4 Cup Spring onion- diced

  • 1/2 Cup of Cashews- halved or peanuts

  • 1 Cup of Chickpeas

  • Fresh lime (absolutely needed at the end!)

Dressing:

  • 1/4 Cup of Natural Peanut Butter

  • 2 Teaspoons of freshly grated Ginger

  • 3 Tablespoons of Soy Sauce

  • 1 Tablespoon of honey

  • 1 Tablespoon of Red Wine Vinegar

  • 1 Teaspoon of Sesame Oil

  • 1 Teaspoon of Olive Oil

  • You can use water to thin if necessary

METHOD

Quinoa:

  1. Rinse quinoa with cold water in a mesh strainer. In a medium saucepan, bring 1 1/2 cups of water to the boil.

  2. Add in the quinoa and bring the mixture to the boil.

  3. Cover it and reduce the heat to low and let it simmer for 15 minutes or until it has absorbed all of the water.

  4. Remove from heat and fluff quinoa with a fork.

  5. Place it in a large bowl and set it aside to cool for around 10 minutes.

Dressing:

  1. Add peanut butter and honey to a medium microwave safe bowl.

  2. Heat it in the microwave for roughly 20 seconds.

  3. Add the ginger, soy sauce, vinegar and both sesame and olive oil and stir until the mixture is smooth and creamy.

  4. if you want the dressing thinner, simply stir in a teaspoon of water or oil.

  5. the dressing might smell very much like peanut butter.. that is okay! but dont eat it by itself… it doesn’t taste as good as when it is all together in the salad.

Salad:

  1. ​Add as much or as lilttle dressing as you’d like to the quinoa.

  2. I always start with a little bit of dressing and usually add more to suit my taste preference.

  3. You can always save some dressing for the end if you like.

  4. The flavours of the dressing coat the quinoa so its delicious if you add most of it now and let it sit. Softly mix it through the quinoa with a fork.

  5. After letter the flavours of the dressing set through the quinoa, mix in all the remaining ingredients.

  6. Garnish with the cashews and spring onions.

  7. Serve with wedges of lime and make sure everyone uses them! it tastes very different without the lime!
