Cooked Cherry Tomatoes on Toast with Butter and Chilli

INGREDIENTS

  • 1/2 punnet of cherry tomatoes

  • 2 dollops of butter

  • Salt

  • Pepper

  • Dried Chilli flakes – optional

  • Sourdough Toast

  • Fresh basil  – optional

  • 1 teaspoon thyme

Method

  1. Heat the butter in a frying pan – not a huge one.
  2. Cut the tomatoes in half and add to the pan once the butter is bubbling.
  3. Add salt and pepper.
  4. Add chilli and basil now if you are going to use it.
  5. Cook until the tomatoes are cooked to your liking.
  6. Serve on sourdough or as an accompaniment to eggs or a big brekky!
