Chicken, Coriander, Potato and Chilli Soup

Ingredients

  • 1 Potato
  • 4 Chicken Tenderloins
  • 2 Large cloves of garlic
  • 1 – 2 chillis
  • A small amount of oil for cooking
  • 2 cups chicken stock
  • half a bunch of coriander

Method

  1. Slice the potato into fine straws.
  2. Slice the chicken finely.
  3. Peel and slice up the garlic – go to tips not tips to see how to easily peel garlic.
  4. Slice the chillis.
  5. Lightly fry the garlic and chilli – don’t let the garlic turn brown as this makes it a little bitter.
  6. Add the chicken stock, bring to the boil.
  7. Add the chicken and cook for about 1 minute.
  8. Add the coriander and cook for another minute.
  9. All done you are ready to serve! How easy and delicious is that! ​
