Potato Rosti, Eye Fillet and Beetroot

INGREDIENTS

  • 8 Beetroots
  • 4 Onions
  • Honey
  • Garlic
  • Olive Oil
  • Rosemary
  • Salt​ & Pepper
  • Desiree Potatoes
  • flour
  • Butter
  • Steak​
  • 2 tablespoons of Horseradish
  • 1 Small container of Sour Cream

METHOD

  1. Peel 8 large beetroot and 4 Onions.
  2.  Cut 4 red onions into quarters.
  3.  Cut beetroots into eights
  4.  Add to a pan with a good dollop of honey, olive oil, garlic (do not peel! Put whole cloves in), rosemary, salt and a bit of pepper.
  5. Cook quite quickly so they are still crunchy!
  6. Add 2 tablespoons of horseradish into a small container of sour cream. Stir *Keep this to the side
  7.  Grate Desiree potatoes and put them in the microwave for about 4 minutes with half a 1cm of water. cover with cling wrap.
  8.  Add flour to the grated potatoes and mix. With your hands make a patty.
  9.  Fry in the pan with a small dab of olive oil, butter, and salt.
  10.  Start them on high heat and turn them down quickly once they start to brown.
  11. Then BBQ your steak to your liking.

Plate on a bed of rocket with coriander and add your horseradish dressing too.
