INGREDIENTS
- Chicken tenderloins or chicken breasts cut into two or three pieces longways – to make them thinner.
- 2 limes
- I bunch coriander for those who can eat it if not Vietnamese mint
- 4 spring onions cut into thin straws
- 1 large clove of garlic chopped up
- 1 table spoon of fish sauce – you won’t taste the fish it is just for the salty taste
- 1 large green chilli or a small red one if you like spicy food cut up
- Coconut cream or milk one large tin
- Rice
- Tzatziki
- Papadums
- Rice
- Mango chutney
METHOD
1.Squeeze the lime juice over the chicken and marinate for 5 minutes
2.Put your rice onto boil about 1/4 cup per person in lots of water.
3.In a pan add a small amount of olive oil and the garlic cook for a minute.
4.Add your chicken and the lime juice it has been marinating in.
5.Add fish sauce and 2/3 bunch of coriander or 10 Vietnamese mint leaves ripped up.
6.Add your spring onion straws.
7.Add chili
8.Add coconut milk or cream
9.Cook for a few minutes until the chicken is cooked through.
Serve with Rice papadums tzatziki mango chutney the rest of the coriander or some Vietnamese mint.
