Chicken Schnitzel

INGREDIENTS

  • 1/2 cup Plain flour
  • 1 – 2 Eggs
  • 3 desert spoons of milk
  • 1 cup Panko Breadcrumbs
  • Dried Basil
  • McCormacks Lemon Pepper – if you can’t get this brand don’t use it just use salt and pepper or you can add finely grated Parmesan cheese.

METHOD

1.Lay your breadcrumbs out on some baking paper or a clean bench add a generous amount of basil and lemon pepper or the Parmesan.

2.Put flour in a zip lock or freezer bag add 2 or 3 pieces of chicken. Shake them around in the bag until they are lightly coated. Set aside on a plate or cutting board. Repeat until you have coated all the chicken pieces.

3.Beat the egg/eggs add a bit of milk.

4.Dip the floured chicken in the egg and milk.

5.Now lay the chicken on the breadcrumbs turn over and press firmly into the crumbs and repeat on the other side.

6.Heat a frying pan add olive oil and butter.

7.Swirl it around together once butter is foaming add the chicken breast once the crumbs are golden turn it and do the same to the other side.

8.Remove from pan once the crumbs have browned turning often.

Serve with couscous and a yummy salad.

Tip: if you can’t find tenderloins or they are too expensive buy chicken breasts and cut into 3 longways!
