INGREDIENTS
- 1 Pork Fillet
- 1 Green Apple
- 8 Long Strops of pancetta (or enough to cover the fillet)
- 1 Handful of fresh sage
- Olive Oil, Salt and Pepper
METHOD
Turn oven onto 200 degrees
- Cut green apple into slices and place in a line on a baking tray
- Put the Pork Fillet onto the green apple
- Crisscross the pancetta over the fillet
- Add the sage on top of the pancetta
- Drizzle olive oil over the top and season with salt and pepper
- Cook in the oven for between 15 and 20 minutes depending on the size of your fillet.
- Serve with a rocket, pear and parmesan salad.
