Apple Sage Pancetta Pork

INGREDIENTS

  • 1 Pork Fillet
  • 1 Green Apple
  • 8 Long Strops of pancetta (or enough to cover the fillet)
  • 1 Handful of fresh sage
  • Olive Oil, Salt and Pepper

METHOD

Turn oven onto 200 degrees

  1. Cut green apple into slices and place in a line on a baking tray
  2.  Put the Pork Fillet onto the green apple
  3.  Crisscross the pancetta over the fillet
  4.  Add the sage on top of the pancetta
  5.  Drizzle olive oil over the top and season with salt and pepper
  6. Cook in the oven for between 15 and 20 minutes depending on the size of your fillet.
  7. Serve with a rocket, pear and parmesan salad.
